Father's Day Cake

Steps involved

  • Make cake layers

  • Make cream cheese icing

  • Make buttercream (no color)

  • Grind Oreos into crumbs

  • Assemble and ice cake

  • Cut out "Dad" letters

  • Put Oreo crumbs onto cake and peel away letters

READ BEFORE CONTINUING: The following recipes are scaled to make the cake pictured above -- a 4 layer cake made with 6-inch round cake layers. If you wish to make a smaller cake, please scale down these recipes.

  • 1 chocolate cake recipe

  • 1 - 1.5 batches Italian meringue buttercream

  • I made this buttercream white chocolate flavored by adding 5 oz. of melted white chocolate (cooled down) to my 1x batch

  • I always like to have extra buttercream rather than not enough, so if you're not sure how much to use, I would recommend 1.5

  • Cream cheese icing (recipe below)


Cream Cheese Icing


Ingredients:


  • 8 oz. cream cheese, softened

  • 2 tbsp. butter, softened

  • 3 cups powdered sugar

  • 1-2 tsp. vanilla extract

  • milk, if needed to thin icing


  1. Mix butter and cream cheese together

  2. Add vanilla, mix

  3. Slowly add powdered sugar and mix until all incorporated

  4. If icing is too stiff you can add a splash of milk until it's the consistency you like

Decorating the cake

After the cake has been assembled and iced:


  1. Take a piece of parchment paper and cut out the letters "D" "a" "d". I used the image below (click the image to enlarge), traced it onto the parchment with an edible marker and then cut the letters out with an exacto knife.

  2. Crush up 15-20 Oreos in a food processor until they are fine crumbs.

  3. Place the parchment letters on the cake and use a paint brush or toothpick to make sure each little piece is stuck to the buttercream.

  4. Taking a handful of the Oreo crumbs, start at the bottom of the cake and drag the handful of crumbs up the cake so they stick to the side of the cake, stopping before you reach the top. Repeat all the way around the cake, making sure to get a decent amount of crumbs to stick around the parchment letters (so it will be easy to distinguish the letters later).

  5. Once you are happy with the way the crumbs look, use a toothpick to gently lift a corner of each letter and slowly peel away to reveal the buttercream underneath.

  6. Slice and enjoy :)
